Lavender infusion: recipe, the right dose and our tips

Infusion lavande

Hello everyone! Samuel here, from our fields on the Valensole plateau. Lavender has been part of our family since 1932, grown organically since 2002. And in the evening, we often end the day with a cup of lavender infusion. Here is our recipe, the right dose and a few tips.

Which lavender for an infusion?

  • True lavender (Lavandula angustifolia): this is the one to infuse. Its taste is soft, floral and slightly sweet.
  • No lavandin: too camphorous, it is not meant to be consumed. To understand the difference: lavender or lavandin?
  • Never essential oil in your cup: it is far too concentrated to drink.

Our organic lavender flowers are food grade, picked and dried on our farm, in bags from 50 to 300 g or in bulk from 500 g.

Lavender infusion recipe

For 1 cup

  • 1 level teaspoon of dried lavender flowers (about 1 g)
  • 250 ml water

Method

  1. Heat the water until it just starts to simmer, around 90 °C. Avoid boiling water, which makes it bitter.
  2. Pour the water over the flowers, in a tea ball or filter.
  3. Cover and leave to infuse for 5 to 7 minutes.
  4. Strain and enjoy plain, or with a touch of honey.

Our tip: start with a small dose. Lavender has character, and too many flowers give a soapy taste.

Our favourite variations

  • Lavender-verbena: half lavender, half verbena, for a rounder infusion.
  • Lavender-chamomile: soft and floral, perfect for the evening.
  • Cold brew: 1 tablespoon of flowers in 1 litre of cold water, overnight in the fridge. Refreshing in summer.
  • Lavender latte: infuse the flowers for 5 minutes in hot milk, strain, sweeten lightly.

The evening ritual

A lavender infusion is above all a moment for yourself: a warm cup, screens off, a few quiet minutes before bed. To complete the ritual: our lavender tips for a good night’s sleep.
